I have been asked if it is possible to Map a Venue. Large outdoor gathering. If people are in the shots, how does that effect the data? The venue would take at least 4 flights to gather all the imagery for a 3D Map.
From my experience, anything that is moving will not be included into the model because the photos captured by the drone will not provide enough matches. I guess it depends on how many people are there. If you are trying to map while a concert/show is going where there are thousands of people packed into a dense area, it probably wont give you the results you are looking for. However, objects that are not moving (tents/structures) will work.

I would try to do all the mapping in one day. Lighting conditions/ weather could be a factor to introduce error into your model. if there are only a few people it will not affect the model.
