How to Use the Histogram and Slider?

I have a background in technology, not agriculture or agronomics. Having stated that, can someone please tell me how the histogram and slider found in the left sidebar of DD are meant to be used?

an ndvi map is showing a range of values, with red being the lowest and green being the highest typically. The sliders adjust the min and max that you are viewing in case you need to ignore some very high or low values that may be skewing your data.

But can you please elaborate? I understand that typically red = lowest and green = highest, with yellow somewhere in the middle.

But what does it mean specifically when I move the left slider and then the right slider? The map color changes, the numbers in the histogram change. But what does it mean? Why would one want to ignore very high or low values?

Imagine you captured a road on the edge of your map which is shown as red. You’d want to ignore those values so the map instead shows the range of everything not including the low values of the road.
