I was wondering if I would get better results at a lower altitude? The default altitude is 246 feet, if I lower it, would it be better?
Also, If I slow the speed down, will it take more pictures, therefore make a better map?

If you lower the altitude you should have a higher resolution map, but sometimes it can get harder to stitch the images together due to there being less features to match in all the photos. If you want to take more photos you can adjust your frontlap and sidelap which should adjust the rate that photos are taken.
As @chasemgray said, but it depends on what you are mapping, why and what the weather is doing. Low altitude corn on a windy day is pointless, for example.
