Does exist a Matrix that tells you which is the best setting in DD (Altitude, speed, Frontlap and sidelap) for a given map and resolution expected?

Not really,
The best thing to do is to start high 350 - 400 ft with 75/75 overlaps and move down from there to see what works in your particular application.
Homogeneous fields usually require increased altitude as the season progresses due to the canopy filling in over the rows making it harder to stitch.
