I was wondering how to get the best map alignment when doing 2D Orthomosaic maps? Seems sometimes my image is offset from to Google Earth image it is placed over. I know GCP can help in this but without them, why is it sometimes far off and other times just a bit off?

As you mention good map alignment can be obtained by using GCPs. You can also improve map alignment by ensuring the GPS and compass on the drone are in a healthy state. Calibrate the drone’s compass pre-flight to help with this.
Depending on the location, the Earth imagery may be out of date as compared to the map which can emphasize an offset.
