Would it be possible to develop an app that will take the elevation data from a dense point cloud and accept a few parameters on the amount of elevation change to use, and have it automatically produce contour curves on top of a 2D ortho map with the elevations written (say every 10’ elevation change, or what ever the user sets to be the elevation differential ).

Upvoting this! I was just about to submit this idea. DroneDeploy already can generate contours but they aren’t viewable in the DD UI. If they could be overlaid on top of the orthomosaic or elevation model that’d be amazing.
